We require notice, ideally two weeks, and beer is subject to availability.
Bright beer is beer that has been transferred from cask into a fresh cask, so it doesn't require any special treatment.
Unlike "rough" beer, the entire contents of the cask is suitable for consumption. Bright beer is suitable for events and parties since the cask does not need to settle and can be moved during service.
The cask can be tapped and vented any time, and is best consumed within 48 hours after tapping. The cask will be 13°C upon collection and he beer will be best if the cask if kept cool (less than 15°C). Depending on ambient conditions, kept outside the cask will likely remain cool for 12 to 24 hours.
We will provide everything you need except a rubber mallet, that is: 2 chocks, a vent peg, a spile, a tap and downturn.

"Rough" beer is the format we dispense at the pub. It is on lees, that is, there is sone live yeast in the bottom of the cask. The live yeast is what causes the cask conditioning (refermentation in barrel).

Rough beer should be left to settle and you should avoid shaken around the cask during service. It is possible to carefully move a cask of rough beer, just be careful not to roll it around too much, and you may find it is hazy for a few hours after moving. Rough beer should be vented 48 hours prior to service, then tapped 24 hours in advance of serving.
Rough beer should be kept cool (ideally around 10 to 15°C). Rough beer is usually good for at least 72 hours if kept cool. Although the cask is filled, around 7% of will be ullage at the bottom (hazy, yeast laden).
